This work package is dedicated to the analysis of biogenic amines—organic compounds that serve as key indicators of the freshness and safety of food products. The research involves the development and application of modern analytical methods to precisely determine their concentration in food, beverages, and food industry wastewater. The results will allow for better assessment of spoilage and contamination processes, directly impacting consumer protection and the improvement of food quality systems.
